Peppermint Paddock sparkles with vibrant Chambourcin-purple hues and effervescent foam. Aromas of black cherry, plum, and blueberries lead to a palate of ripe fruit, Christmas spices, and minty freshness. Fresh acidity balances the slight sweetness, making it a perfect festive drink that pairs wonderfully with rich meats.
Surrounded by peppermint gums, the block was replanted in 1989 with Chambourcin after Shiraz struggled on the site. Fully ripe fruit retains high acidity, abundant color, flavor, and tannin—ideal for creating a vibrant sparkling red wine.
